Lakes Christian Centre/ Mission Cafe, Windermere – Case Study

When the Lakes Christian Centre decided it wanted to develop a cafe on the ground floor of its new building in the heart of Windermere, it needed a kitchen design and fit-out business that would take the journey with them.

Simon Berry, Elder at the Church explains:

Sal and John at Lakes Catering Maintenance were the ideal company and people to help with this development. 

We needed a company that was big enough to have access to all the best and most up to date kit as well as flexible enough to deliver a project that was inevitably going to change as we went along – working in an old 1901 building is never straightforward.

We didn’t want to have an external extract from the main kitchen or still room so that we did not upset those living close by with smells or noise. This was tackled with a “can do” attitude rather than the often “that’s going to be hard” comment.

The specification and design phase went well and despite being let down by not one but two plumbers during the fit John and the team got it all in and working on time.

It was great to have Sal and John always on the end of the phone whenever we had a moment of “I can’t remember what to do with this” question!

Our Project Management 

From the desired menu of equipment we were given we decided on predominantly Lincat products as the brand is well known for a variety of equipment from budget to heavy duty. The cafe site was on single-phase electrical supply and again Lincat is so versatile so this was also easily achieved. 

We know their products well and can attend any faults (should any arise) so reducing down time for the cafe as they focused on launch. Due to the amount of equipment we purchased with Lincat we were able to secure a bulk discount which we passed onto the client.

For the main oven we suggested the MKN ‘Space Combi’ with a ‘HoodIn’ feature to improve steam extraction. As Simon says he didn’t want a full extraction ducting system so as not to upset his neighbours so we used Lincat’s self venting hoods which are perfect over electric equipment and cut out any building or walls having to be adapted.

The MKN Space combi oven is just 55cm wide and takes 6 x 1/1 full size gastro trays. We also organised free on site training for the team carried out by MKN Chef’s Choice, Richard Robinson.

We installed:

The kit comprises of the combi, a twin fryer, a full traditional electric cooker range (the client declined induction) and an electric griddle.

The dishwasher area proved a little challenging due to there being no scope for a condensate hood due to the building design and a large window unaffected the space. We offered the Comenda hood machine (PC07/CRC2) which has a built in ‘heat recovery unit’ which extracts the steam and uses it back to the machine, saving money on any extra external works and 35% less water consumption! Once again Comenda are multi-phase so only having a single phase supply didn’t pose a problem.

We kept the cook line modular and matching so not only is it a neat cook line each item can be easily worked on for service and maintenance.

John liaised with all the other contractors on site and visited regularly to check on progress while the building was still being modified which meant we could keep track of any changes we may have had to make to the steel fabrications. The fabrications were manufactured by Bridge Fabrications where we installed a mobile hot cupboard under the large centre table to save space.

The servery area consisted of a super Expobar Diamante 2 group espresso machine we had refurbished and serviced after buying it back from a customer who was closing down, a beautiful machine perfect for front of house, along with a water boiler and bottle cooler.

Rosanna cafe manager commented that:

LCM also fitted out our front of house serverie area which both looks great and is very functional, we and our customers love it
